Without the wood, there wouldn't be barbecue.  With that being said, the wood we use is an important component of our success.  That is why we use locally sourced wood, primarily live oak and a mix of other local Florida oak.  Oak wood is a staple of Texas Barbecue. 

Each cut of meat that graces our pits has been meticulously tended to for the full duration of its cook.  Fires and temperatures are continuously being monitored assuring an even and consistent cook every time.
